Foodborne Illness |
| Description: |
|
An investigation is initiated when a confirmed case of food poisoning arises and when several individuals have a common source of illness. An Environmental Health Specialist (EHS) interviews those persons affected or potentially exposed to determine foods consumed, symptoms experience, and time of onset of symptoms. Food service personnel are questioned as to methods utilized in food preparation. Food service establishments are examined to determine proper functioning of equipment and samples of related food are collected for laboratory analysis to determine if contaminated. Attending Physicians are consulted for input as needed. The specialist then compiles all the data and employs statistical methods to infer conclusions and determine the cause of the outbreak. The EHS ensuring that corrective measures are implemented makes follow-up compliance visits to the food service establishment involved |
